
A seriously well thought out combination of flavors. A high-mid spiciness that comes on fairly evenly, without a shock, but you can feel it all the time. The flavor is rich, a little smoky, a little umami, with a sense that everything is very thoughtfully put together. It's not sweet and it's not sour at first, it goes more in a warm, spicy direction that sticks to food nicely. It works as a sauce that you use when you want something with character, not just an accompaniment, and it really goes almost everywhere - it sits very nicely on meat, roasted vegetables, or anywhere you need a little more depth.
