
Barbacoa is a bit more comfort food than Rojo, although the heat remains at a similar level. The spiciness is medium, present enough to feel it, but never overpowering the flavor. First comes that BBQ vibe, a little smoke, a little warmth, an almost meaty feeling that really sticks to the food. The flavor is deeper and rounder, without sweetness, everything seems connected and makes sense.
