
This sauce immediately reminds me of street food, where everything is in the spices. Garlic and warm shawarma notes are in the foreground, while the heat is more in the background and just nicely connects the flavors. That's why it works very naturally and doesn't force it into the foreground. This is the kind of sauce you add when you want a dish to have more character, but not more heat.
